Artisan Grains Country Veg & Cashew Nut Roast

Christmas dinner is perfect for a vegan nut roast. They go so well with all the trimmings: roast potatoes, vegetables and gravy. They are a little timely to put together, so a readymade version can sometimes be a perfect solution for vegan guests or if you have limited time in the kitchen.

I tried this version from Artisan Grains. It comes in a sachet and you add water to it in a bowl and mix (much like stuffing).

Leave for five minutes and then put back into the (recyclable) container it comes in and bake in the oven for 35 to 40 minutes.

I absolutely loved this. It was extremely tasty, looked good and turned out really well. I’ll certainly be buying this again. I love how it’s high in fibre and protein, and really easy to make.

I tried the Country Veg & Cashew variety. Artisan Grains also make a Mediterranean Sundried Tomato Nut Roast flavour, as well as a Gluten Free Cashew Nut & Cranberry Nut Roast.

These are ideal if you’re not prepared for a vegan Christmas dinner or just want something in your store cupboard at home which is easy to put together for an impromptu roast dinner.

I bought mine from Holland & Barrett, where they currently cost £2.69 per 200g pack.
